Sandy Carlson, Executive Director Stoney Brook Senior Living

Sandy Carlson from Stoney Brook LivingSandy joined Stoney Brook as the Executive Director in February 2011.  She has over 20 years of experience in the healthcare industry and has served in such roles as Admissions Director, Administrator, and Regional Marketing Director.  She is very involved in the community and represents Stoney Brookthrough several local associations and professional memberships.  She has a Marketing Degree from Louisiana Tech University and obtained her Licensed Nursing Facility Administrator License at McClennon Community College in Waco, Texas.  She enjoys camping, shopping, sports, singing and being involved in her church.  She and her husband live in Belton with their two sons.


Elyse Cruz, Community Marketing Director

Elyse Cruz from Stoney Brook Living

Elyse Cruz, Community Marketing Director at Stoney Brook in Copperas Cove.  Elyse was brought to the Belton area by her husband John, from Kansas. They were married in November 2009, and moved April 2010. She is currently enrolled at Manhattan Christian College, majoring in Business Management and Ethics, and will graduate with a BS in December 2011. John and Elyse welcomed their first born, Amelia in January 2011.



Andrea Martin, Business Office Manager

Andrea Martin from Stoney Brook Living

Andrea Martin was born in Laredo, TX where her maternal grandparents Saul and Antonia Rocha owned a motel and restaurant for over 50 years.  She has a brother Erik Hauk and they have lived in Copperas Cove for 10 years. Both are graduates of Copperas Cove High School.  Erik is currently studying at SCAD in Atlanta, Georgia.  Mrs. Martin's father has been in the newspaper industry for 39 years and her mother was an award winning radio and tv broadcaster for 22 years.  Andrea moved to Copperas Cove from Cameron, Tx where her paternal grandfather V.W. Hauk was a Milam County commissioner for 16 years and her grandmother Anita Hauk was a first grade teacher for 30 years.  Andrea is married to Travis Martin, the graphic designer for the Copperas Cove Leader Press, and together they have a two year old son named Hunter.  Andrea has been in business administration for 6 years.


Ken Engelhart Assisted Living Director

Ken Engelhart from Stoney Brook Living

Kenneth S. Engelhart moved to Copperas Cove, TX in 2009 from Mountain Home, AK. As a veteran of the US Army Engineer Corp, he received in depth training in first aid, battle field triage, and critical thinking under stress. He attended Arkansas State University where he received his degree in Nursing under the mindful training of Linda Lincoln, GNP. Under her strict teachings he learned not only how, but also the who, what, where, and why to disease processes, medication, patient education, and the holistic approach to nursing.

He received his nursing license in 2004, and over the past seven years has had the pleasure of working in Senior Care. Some of the skills he brings to Stoney Brook are IV therapy, Venous blood draws, wound care, extensive training in Alzheimer’s Dementia and Geriatric Psych.


JoAnn Burk Chef

JoAnn Burk from Stoney Brook Living

Jo Ann was born in Jackson, Mississippi, raised on a 260 acre farm near Kosciusko, Mississippi. Like most girls of the deep South, she learned to cook and help out in the kitchen early in life, all the old Southern favorites. Her family had a two acre garden every year so she had plenty of fresh ingredients to practice with. At the age of fourteen she was cooking Wednesday night supper for her church. She moved to Fort Worth, Texas with her family and instantly started picking up the Texas Style of Cooking. Her love of cooking and her creativity pushed her in the direction of professional cooking. She has twenty years of management experience and over thirty years as a professional chef.
